
The Perfect Summer Salad -- Tomatoes, Peachs, Scallions, and Burrata with a Chili Crisp Honey Dressing
So easy to make and so much flavor and all the freshness summer has to offer. A simple mix of tomatoes, peaches, scallions, and burrata topped off with a 2-ingredient dressing: Chili Crisp Honey and apple cider vinegar. Yum!
I was wandering around Rome and looking for lunch and came upon a cafe that had a beautiful salad on display. I ordered it. Incredibly simple: tomatoes, slices of peach, chopped scallions, and burrata. When I got home I wanted to make it and thought about the right dressing. Ahhhh, Chili Crisp honey mixed with apple cider vinegar to add a touch of sweetness, hot crunch, and a vinegary tang. Here you go...
Salad Ingredients:
3 LARGE tomatoes
2 RIPE peaches
3 scallions
1/2 lb burrata
Preparation:
- Core the tomatoes then cut in half then slice each half into 6 wedges. If wedges feel too big, cut them in half.
- Use a paring knife to cut into the peach down to the pit around the top-to-bottom circumference of the peach, then twist lightly to separate halved and remove the pit. Cut each peach half into wedges (about 6 for each half).
- Chop the white and green parts of the scallions into 1/4-3/8" pieces
- Use your fingers to pull the burrata apart into small pieces. Don't worry if the creamy interior separates from the outer shell.
- Put the cut tomatoes, peaches, and scallions into a large salad bowl or service dish and dot the top with the torn burrata.
Dressing Ingredients:
3 Tbs of Chili Crisp Honey
3/8 cup of apple cider vinegar
Preparation:
- Put the Chili Crisp Honey (be sure each tablespoon is half honey and half crisp) in a tall bowl.
- Add the apple cider vinegar
- Stir until the honey has dissolved into the cider and the mixture pours easily.
- Adjust to taste. You might want a little more Chili Crisp, a little more Honey from the bottom of the jar, or a little more apple cider vinegar.
Last Step:
Drizzle the dressing over the salad and toss. Truly, this is something you'll make over and over again throughout the summer.
