Chili Crisp Tomato Soup and Grilled Cheese with Chili Crisp
Tomato Soup with Chili Crisp and Grilled Cheese Sandwich with Chili Crisp
Hot tomato soup. It’s the right answer for a cold day, a case of the sniffles, or just when you need something warm and comforting . It’s easy to make and the addition of Chili Crisp just makes it deeper and more satisfying. Add a swipe of Chili Crisp to a grilled cheese sandwich right before you put it in the pan or the oven and it takes a classis to a whole new level.
Soup Ingredients
4 tbs tomato paste
2 cans diced tomatos with juice
1 diced large yellow onion
4 minced garlic cloves
1 quart of vegetable or chicken broth
1 tbs dried parsley
1 tbs dried oregano
3 threads of saffron
1 tsp salt
½ tsp pepper
4 tbs olive oil for saute-ing
2 tbs Chili Crisp; more for drizzling
How to Cook:
1. Put 2 tbs olive in frying pan and saute onion to golden brown
2. In a medium soup pot, put remaining 2 tbs of olive oil in and cook tomato paste on low heat until fragrant (6-8 minutes)
3. Add cooked onion to soup pot
4. Add 2 cans of diced tomatos and juice and stir until tomato paste is thoroughly mixed into mixture
5. Add broth and garlic, herbs, and saffron
6. Add Chili Crisp
7. Bring to slow simmer
8. Use an Immersion (stick) blender to blend soup into a smooth consistency
9. Serve up and drizzle more Chili Crisp on top to taste.
10. Serve with a grilled cheese sandwich with Chili Crisp.
Grilled Cheese Ingredients (2 sandwiches)
Sandwich Ingredients
4 slices of sourdough bread
3-4 ounces of sharp cheddar cheese grated
2 tsp Chili Crisp
2 tbs Butter (room temp) for ouside surfaces of sandwiches
How to Cook:
1. Mix Chili Crisp with grated cheese
2. Butter one side of each slice of bread
3. Put cheese between two slices with buttered side out
4. Cook in a large heavy frying pan on top of the stove, or place on a sheet pan and cook in a 400 degree oven until cheese melts and bread browns (8-10 minutes)
5. If you like to dip your sandwich, cut it into quarters or sticks.
